Yep- But for older models it's to be expected (DVI was introduced in 1999, US HDTV broadcasts and TV sales in 1998). Due to the low volumes at which projection TV's are sold, produced and designed, it also took a bit longer before DVI became commonplace (search the web and you'll find a huge amount of discussions about this topic popping up in mid 2005- this is when the last stock of analog-only devices was being flogged off (by Wal-Mart, apparently) ;)).

That depends mostly on what you define as "crappy looking", really... Remember live sports broadcasts from the 80's/early 90's from the other side of the pond? That's the quality you can expect from that ~$2000 Sony device. (So no stutter, but colours can be a little off and images have a somewhat lowres/blurred appearance.)
Remember, it's nothing like a simple converter- it's a quite capable computing device that scales/interpolates video sequences mathematically in realtime. The big question is, is €200 enough to build a decent one nowadays... I have my doubts about that, but the Chinese have surprised me before :)

Even the crappiest CRT TV's, yes... But your projection TV seems to be a DLP model, not CRT, so you will not find such a potmeter anywhere in or on the device for sure.
