Thanks for the info guys. The move.l solution is the most elegant as it generates an indivisible cycle on a 68030 point of view. Masking bits 6 & 7 in reg 7 can't hurt too. If the TOS masks the interrupts when accessing the YM and if you do so when you access the YM with two move.w instead of one move.l, then it seems that everything should be ok to play safely SID voices and Syncbuzzer in GEM backgound.
