Robocop 3 uses DMA sound. During the newsreader section you can hear the sound panning left and right.
You reckon Stardust thrashes the hardware the most? Hmm, Obsession: larger playfield, scrolling at 50 Hz, over 40 colours on-screen, higher frequency music replay (by the sound of it - Stardust on STE sounds more muffled than title music during the game - though play it on a Falcon and the in-game music is really sharp).
There's also Highly Side, an obscure French shareware Tron clone with split screen scrolling playfield. Appears (and even claims, if I remember right) to have more than 16 colours.
Magic Boy (commercial game) used STE palette for smoother rasters, and DMA sound.
Battletris from New Core, a great Tetris clone except for that the blocks fall all the way down the moment you push down, instead of only for as long as you push down.
Blat: GFA BASIC(?) PD Columns clone
Operation Garfield: PD Op Wolf clone
The Bitmap Brothers'/Renegade's GODS was supposedly STE-enhanced, I read somewhere. From memory, this could be true as far as the rasters go, but it still scrolled and responded like a pig. The sound was certainly nothing more than YM blips and blops.
