Excellent work! It's something I have thought about doing myself for quite a while, but of course I don't ever do anything :/
You are probably aware of The Paranoids STE and Falcon documentation, about how to maintain compatibility with these machines? Could be useful for your development section.

A few more games for you:

Final Fight
Publisher: US Gold, 1991
It says "STE Hardware detected" at the start, before going on to scroll like a pig and sound awful... I can't tell the different between it and the normal ST, maybe just a few colours...
It's still playable somehow!

************
Zool
Publisher: Gremlin Graphics,1993
The STE improvements seemed noticable - smoother scrolling, smoother sprite animation

************
Chaos Engine
Publisher: Renegade
Developer: Bitmap Brothers,1993

Apparently you could see the STE colours put to use if you compared FM and E screenshots side-by-side, especially the intro screens, death picture etc
Apparently only needs 1/2 meg ste, but 1meg FM? someone said that on LGD
****************
Rock 'n Roll Clams
Publisher: Caspian Software, developed by Caspian too IIRC,1994
I know it used the STE and Falcon joystick ports. Apparently used the blitter too, but you wouldn't know to play it.... a decent coder could have done this on the STFM I think...

For more lethal Xcess info, see this:
http://www.edv-rudolf.de/lethal-xcess/

You can take the ? off this game on your list :-) What does it use on the STE? What DOESN'T it use ;-) blitter, scrolling, sound etc

Finally, another question... are you going to include the demo genre? There are lots out there... don't forget the ones that Atari released too! (one had a sample of The Cure playing while doing a few pissy things on the screen (changing palette, scroller etc), forget its name)
