It depends what do you want to code. If you are happy without HBL tricks, advanced DMA joggling or the DSP to some extent, you are fine with Hatari, even Aranym in some cases.
But when it comes to timing sensitive stuff, there's no other way than real hardware. Hatari can help with cache hit/miss analysis but generally gives you faster results than the real thing.
Sqward's UIP helps a lot, same as Jookie's CosmosEx or Joy's PARCP-USB but that's always just a way how to transfer files, debugging must happen on real hardware. :)
