Easy, the top Protracker note is about 28 kHz, having two octaves higher will get to 112 kHz. I looke dup the Protracker period table now, and it seems that B3 is 31388 Hz, in Milky Tracker (the only XM editor I have available) Protracker B3 equals B5, and it goes all the way up to B7. So 112 kHz was approx for the C-note. For B7 it would be about 125 kHz.
About stereo samples - you are right, it's stereo panning per channel, not actual stereo samples.. Anyway the end result is the same, you can't do a full featured full quality player on a Falcon due to bandwidth and CPU sample scaling problems, and then we havn't even got to the sequencer bits :)
