I learnt z80 then 6502, then 68K.
68K is enjoyable because there aren't any surprises. It has a very regular instruction set and a lot of registers which can be used with any instruction.
Even instruction timings are regular, so when you're coding Overscan routines that require precise timings you can usually keep track of timings in your head as you code.
x86 in comparison is a nightmare. It's a real shame we don't have superscalar 68K machines today!
