Hi Chris,
It might be helpful to have a look at your configuration files, as it might provide me with clues on what is going wrong here.
I'd be happy if you could email the files to me at gokmaseatbigfootdotcom :)
Right now I only have one partition on the HD, so EasyMiNT is not an option for me at this time. Might look into trying that somewhat further down the road though.
