Ok, I had the same basic idea with FCP/DVDSTUDIO but my DV-bridges are cameras (JVC and Sony).
I wish you good luck to have a nice quality capture from composite (the advc-100 doesn't seem to have RGB/component input either). My experience is that it's watchable with composite, but far from "crystal clear" as the Mindcandy. Applying noise-removing filters is of course an idea, but it can just as well mess up the original graphics.
Tricky stuff all this :)
